When most people think of distilled potatoes, they think of Vodka: clean, lightly-flavored, slightly creamy. Hopefully benign and likely bland. This isn’t that.

Inspired by German Kartoffelschnaps, ’Tater’ is a 100% potato spirit fermented and distilled for flavor in the same fashion as whiskey. Made from a mix of tiny yellow, purple, and red potato varieties bred specifically for taste, the potatoes were hand sorted and washed (I remember because the water was really cold), then milled, cooked, mashed, fermented in oak and distilled in a 3-plate bain-marie copper pot still by me at Stone Barn Brandyworks. .

This approach captured a rich spectrum of the potato experience from raw to cooked: earth, cucumber, horseradish, dill, chocolate, black pepper. The distillate was rested in glass for 3 years to soften some of the edges and is now ready to accompany gravlax, caviar, pickle plates, or any place else that needs some liquid alcoholic potato.
